Ingredients
- 4 cups mixed green lettuce
- 1 cup fresh spinach or arugula
- 2 red bell peppers, sliced
- 2 orange bell peppers, sliced
- 1 large red onion, thinly sliced
- 1 cup purple cabbage, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Wash and dry all lettuce and greens thoroughly.
- Slice bell peppers into thin strips, removing seeds.
- Thinly slice the red onion into rings.
- Combine all greens in a large salad bowl.
- Add sliced peppers, onions, and cabbage.
- Drizzle with olive oil and red wine vinegar.
- Season with salt and pepper to taste.
- Toss gently and serve immediately.
